Summertime is definitely my favorite time of year in Seattle. The rain is finally gone (YAY!), the days are long, and the weather is usually a perfect warm but not too hot temperature. It’s the ideal time of year for being outdoors and definitely inspires a healthy lifestyle (eating right, exercise, taking my Emergen-C).
But then my alarm goes off on a Monday morning and reality sets in 🙂 ….. another busy work week on top of social activities and home projects. It’s a balancing act of getting done what I need to each day while also taking care of myself and keeping healthy.
Always looking for ways to multi-task, I take that mentality to my health & exercise (Is that cheating?).
My top multi-tasking summer outdoor healthy activities:
- Biking to work. Instead of sitting in rush hour traffic, I get my workout in ON MY WAY to work!
- At the end of a long week, I definitely need some girlfriend time! Instead of gabbing over cocktails, we power walk and chat!
- Alternate dog park trips with day hikes to burn off our puppy’s energy! (while the dog park is great exercising little Reagan, I get zero exercise 🙂 )
- Weekend vacation? Try camping! Even this city girl has gotten on the band wagon!
- Make your desserts with real ingredients and healthy food choices …..
Which brings me to my favorite popsicle recipe. Not only is it made with real fruit and healthy ingredients, it’s creamy AND healthy! Perfect treat after any outdoor activity!
Ingredients
- 1 banana
- 2 packets Tangerine Emergen-C
- 5 peaches, sliced
- 2 cups whole milk Greek yogurt
- Juice of 1 lemon
- 1 teaspoon vanilla
- 1/3 cup coconut milk
- Olive oil
- Popsicle molds
Head on over to your local Walmart to pick up your ingredients! I found my tangerine Emergen-C right over in the vitamin isle. From the variety of flavors, I chose tangerine as it’s a perfect match to the peaches and bananas. Emergen-C is an awesome dietary supplement that is both low in sodium and can fit as part of a healthy everyday diet. LOVE the idea of adding it to this delicious treat!
Directions
Preheat your oven to 350 degrees F and line your baking sheet with aluminium foil. Place sliced peaches on the baking sheet, brushing with olive oil. Bake for about 20 minutes, flipping peaches halfway through the baking time. Peaches should be juicy and slightly tanned on the edges, but NOT crisp!
While peaches are baking, blend banana, yogurt, lemon, vanilla & coconut milk. Then stir in two packets of Tangerine Emergen-C. Mix well. Place mixture in the fridge to keep cool while waiting for peaches. Once the peaches are complete, let them cool for 5 minutes. Then chop to make 1/2 inch size pieces. Take the mixture out of the fridge and fold in the peach pieces gently. Mix all together so that peaches are evenly distributed (they MAY start dropping to the bottom, but don’t worry about that!).
Spoon the mixture in to your popsicle molds. Make sure to get those peaches that might have sunk to the bottom of your bowl! Freeze for at least 5 hours before enjoying.
