Summer is definitely my favorite time of year to entertain. There’s just so many ways to host a party: BBQs, outdoor movie nights, pool parties, etc. Plus it’s easier to turn a simple dish into something more special and I LOVE simple.
As much as Joe and I like to host, we have very different definitions of what that means. While Joe will be cooking up a storm all day before guests come over, I’ll be cleaning our baseboards and picking out music. Yet, I always love having at least one dish that really wows our guests. These grilled apricots never fails to impress!
Grilled Apricots Ingredients
- 1 cup Weight Watchers Whipped Cream Cheese
- 1/3 cup greek yogurt
- Juice of one lemon
- 2 tablespoons honey
- Handful of mint leaves, ripped
- Handful of pinenuts
- 8-10 apricots
- 3 tablespoons butter, melted
Directions
To make the dip, combine the Weight Watchers Whipped Cream Cheese, lemon, honey and greek yogurt in a blender pulsing until evenly mixed (about 60 seconds). Store in the fridge to keep cool until you’re ready to serve with apricots.
Next preheat the grill to medium-high heat. Cut the apricots in half, removing the pits and brush each on both sides with a little melted butter. Place apricots cut-side down on the grill and cook for 3-4 minutes until there’s grill marks. Flip over and grill the other side for 2-3 minutes.
Let the apricots cool slightly before placing on a platter. Then add a scoop of the Weight Watchers Whipped Cream Cheese filling on top of each apricot. Sprinkle pine nuts over and top with a couple mint leaves.
Real ingredients, easy AND delicious! Now back to cleaning those baseboards 🙂
